Any way to do that in single player? So if I have a machine gun and run over a rocket launcher I dont have, it doesn't switch? I hate auto switching in games in general.

looked through all Q2-console commands, but could'nt find anything to disable the automatik weapon switching in SP.

It's hardcoded for SP. There's no way to change it without editing the source code and recompiling.
p_weapon.c->Pickup_Weapon():
